About it

Vanilla ice cream is flavored with vanilla from the seed pods of the vanilla orchid, or with vanilla extract and flavoring. Because its flavor is clean and unmasked, vanilla is the flavor by which ice cream makers are often judged.

Storing it

Ice crystals and a shrunken, gummy texture mean the tub has warmed and refrozen too often. Store it deep in the freezer, not in the door, and press parchment onto the surface to slow freezer burn.

Using it

Vanilla is the foundation flavor: it carries warm desserts, anchors banana splits, and disappears into milkshakes and affogatos. Its neutrality is its strength; it never competes with what it accompanies.

Swaps & pairings

French vanilla swaps in richer, with an egg custard base and a deeper yellow color. Vanilla gelato is denser and softer. For a lighter option, vanilla frozen yogurt keeps the flavor with a gentle tang.
