About it
Coffee ice cream's trick is balance: too little coffee reads as sweet cream, too much turns bitter when frozen, since cold mutes sweetness and sharpens bitterness. Good versions brew strong coffee or steep grounds in the cream base itself.
Storing it
Seal tightly; its coffee note fades with freezer age. Temper a few minutes before scooping.
Using it
Pour a shot of hot espresso over a scoop for an affogato. Blend coffee ice cream with milk and ice for a frappe; add chocolate for a mocha shake.
Swaps & pairings
Affogato over vanilla ice cream is the drinkable cousin. Espresso-flavored varieties swap in with more punch.
