About it
The percentages on milk labels refer to fat by weight, not calories: 2% milk still gets about a fifth of its calories from fat. It was introduced as a lighter everyday milk and became the most common choice in American refrigerators.
Storing it
Keep the carton closed to limit odor pickup. It freezes for up to 3 months; thaw in the fridge and shake before using.
Using it
Use 2% milk for everyday drinking, cereal, and most baking. In rich sauces and custards, whole milk gives a fuller result.
Swaps & pairings
Whole milk swaps in with more body. Between 2% and 1%, the difference shows most in cooking; drinking is closer.
