About it
In the United States, whole milk is standardized at 3.25 percent milkfat. It separates less and tastes fuller than reduced-fat milks because the fat carries flavor and gives body to cooking, which is why it is the default for baking and sauces.
Storing it
Milk absorbs odors, so keep it sealed and away from strong foods. It freezes for up to 3 months; thaw in the fridge and shake, as it may separate slightly.
Using it
Use whole milk as the default for baking, béchamel, and chowders. Bring it to room temperature before baking for more even mixing.
Swaps & pairings
2% milk drinks nearly the same with less richness. For sauces and baking, a splash of cream in 2% milk restores the body.
