About it
Pistachio is an old gelato and ice cream flavor with a notoriously fickle color: the nut itself is a pale green-brown, so the vivid green of many pints comes from coloring. Premium versions are a dusty sage and taste distinctly of the nut, not almond.
Storing it
Nut oils oxidize, so finish the pint within a month of opening for the best flavor. Temper before scooping.
Using it
Serve pistachio as the star of a simple sundae, or pair it with chocolate and rose notes. Buy the palest version you can find; it usually means real nuts.
Swaps & pairings
Almond ice cream is the nearest common swap. Pistachio gelato, where available, is the same flavor at lower fat and warmer serving temperature.
