About it
Whipping air into cream cheese changes how it spreads more than how it tastes: a cup of whipped weighs less than a cup of brick, so per-spoon calories drop even though the recipe is the same. Tubs often add small amounts of stabilizer to hold the air.
Storing it
Whipped cream cheese does not freeze well; the foam collapses and weeps. Buy the tub size you will finish.
Using it
Spread whipped cream cheese as is, or fold in herbs, scallions, or smoked salmon for flavored spreads. It is not ideal for baking, where brick cheese measures better.
Swaps & pairings
Whip softened brick cream cheese with a teaspoon of milk to make your own. Neufchâtel gives a lighter, tangier spread.
