About it
In the United States, organic milk must come from cows fed organic feed, given access to pasture, and not treated with antibiotics or growth hormones. Much of it is ultra-pasteurized, which is why organic cartons often carry later dates than regular milk.
Storing it
Once opened, organic milk spoils on the same schedule as regular milk. It freezes for up to 3 months; thaw in the fridge and shake.
Using it
Use organic milk exactly like conventional milk. Check whether your carton is ultra-pasteurized if you plan to make yogurt or cheese, since heating changes curd behavior.
Swaps & pairings
Regular whole or 2% milk swaps in one for one. Organic is a production standard, not a different ingredient in the recipe.
