About it
Pepper Jack began as Monterey Jack studded with peppers in the American Southwest. Makers tune the heat from gentle jalapeño warmth to habanero fire. Because the base cheese melts so well, the pepper version became a burger and nacho standard.
Storing it
Keep sealed to protect other foods from its spice. Pepper Jack freezes acceptably when shredded, up to 2 months.
Using it
Melt Pepper Jack anywhere Monterey Jack goes when the dish wants heat: burgers, nachos, and mac and cheese. Grate it for even melting.
Swaps & pairings
Plain Monterey Jack with fresh or pickled jalapeño stirred in is the exact formula. Spiced Havarti gives a softer, milder version.
