About it
UHT milk is heated hotter than standard pasteurization (around 275°F for a few seconds) and sealed aseptically. The high heat slightly caramelizes the milk sugars, giving a cooked, mildly sweet flavor some drinkers notice at once.
Storing it
Chill UHT milk before drinking for the best flavor. It freezes like fresh milk once opened, up to 3 months, with some separation.
Using it
Use UHT milk exactly like fresh milk in cooking and baking. Note that its heated proteins make softer curds, so cheesemakers usually avoid it.
Swaps & pairings
Fresh milk swaps in one for one. UHT is the swap when refrigeration or shopping trips are limited, not a different recipe ingredient.
